At Impossibly GlutenFree, our mission is simple: to bring joy to the gluten-free community—one cookie at a time.

As gluten-intolerant founders, Kristin and Sunny were tired of gluten-free desserts that asked people to settle—cookies that were dry, overly sweet, or clearly “not the real thing.” They believed the gluten-free community deserved better. When Kristin’s husband, Adam, perfected an impossibly gooey, decadent (yet not-too-sweet) chocolate chip cookie that defied every expectation of gluten-free, the idea for Impossibly GlutenFree was born. Together with their partners, Raj and Adam, Kristin and Sunny set out to share that cookie—and the joy it brings—with the world.

Everything we make is rooted in one belief: dietary restrictions should never mean compromised experiences. Whether you’re enjoying one of our cookies at home or discovering it at your favorite restaurant, we hope each bite delivers the joy that inspired us to share them in the first place.
